Recipe Friday: Chilies Rellenos

Here's a recipe to help you celebrate Cinco de Mayo this weekend!

A little while ago I made Chili Rellenos. For those of you who haven't had it -- it's delicious! It's a mild chili pepper, stuffed with cheese, battered, and then fried. Really, what's not to like??

Until I made this, I had only enjoyed this meal at a restaurant. To be honest, it's a challenging recipe. But the results are very good and worth the effort. I have two hints: 1) try to minimize the size of the cut in the chili to remove the seeds. 2) Try to seal that cut with toothpicks as much as possible. This way you don't loose all of the melted cheese.
