Ok, this recipe is really for Brunswick Stew. But I'm pulling it from an old-time cookbook called "Recipes from Old Virginia." My wife recently obtained this book during a business meeting in Richmond , VA. It contains some very, er, interesting recipes, next to some delicious ones.
To give you and idea of how old-time this Brunswick Stew recipe is, the first paragraph contains a little rhyme that starts with , "First catch your chickens...." The directions below the rhyme also contains, "Squirrel or rabbit is excellent in place of chicken." And sadly, during High School, I learned that the edible squirrel of choice is the Gray Squirrel. (No, I never ate one!) So, if you ever do substitute squirrel for chicken, now you know the one to use. :)
Ingredients:
1 stewing chicken (can be substituted with squirrel or rabbit)
4 Irish Potatoes
1 pint butter beans
1-2 diced onions
Salt and pepper
1 pint canned corn or 6 fresh ears
1 pint canned tomatoes or 8 fresh
1 cup biscuit or bread crumbs.
Directions:
1) Cut meat in pieces and summer with potatoes, butter beans and onions, salt and pepper until tender
2) Remove bones and add corn and tomatoes
3) Cook until vegetables are done
4) Add butter and crumbs to thicken like a stew

Recipe Friday: Cilantro Lime Chicken
First, I'd like to apologize that I don't have a good 4th of July recipe for you. To be honest, I'll be making these hamburgers tomorrow evening. But since I didn't want to re-post a recipe that I've already given, I thought that I'd share something that I created yesterday.
It's loosely based on the rosemary chicken marinade that I've already posted. However, the below recipe was perfect for the grilled chicken soft tacos that I made last night.
Ingredients:
1 package of chicken breast (3-4 breasts)
1/2 cup olive oil
3 large limes (for lime juice)
2 tablespoons chopped cilantro
Directions:
1) Combine olive oil, lime juice, and cilantro into large plastic bag
2) Place chicken into bag
3) Put bag in refrigerator for 4-6 hours. Evert couple of hours, massage / move chicken in bag, so that it is coated in marinade.
4) Place chicken on grill or skillet until cooked
5) I suggest you serve with heated tortillas, rice, salsa, and guacamole. But it's good by itself too!

Tenders (Cornelius)
During coffee last week with a friend, I was reminded that I needed to visit Tenders Fresh Food in Cornelius. I'd been told that they have some of the best friend chicken around, but I had forgotten -- until it was mentioned during our morning conversation.
So yesterday I headed out to meet another friend at Tenders. On the corner of Westmoreland and Statesville Roads in Cornelius, it's easy to find. And from the looks of the parking lot at noon -- a LOT of people have already found it.
I walked in and took a look at the menu. It's very basic. In fact, the menu reminded me of the menus available at Five Guys and In-N-Out Burger. This restaurant focuses on only a few things and does them well. As opposed to some of those fast-food restaurants that have dozens of entrees, Tenders has only three -- Chicken Tenders, Chicken Sandwich, and a Pork Loin Sandwich.
I chose the Chicken Tenders, and added Honey-Mustard sauce, Fries, and a Pepsi. While waiting for my order I looked around the restaurant. This place is VERY clean. Not a speck of dirt or crumb of food around. The owner obviously takes pride in this restaurant.
Once my food was ready, I loaded up on ketchup, went outside, and grabbed a table with an umbrella for shade. I took a bite of the fried chicken and was amazed how tender the chicken was. It almost fell apart while picking it up -- something I wasn't ready for.
Usually,when eating chicken tenders, I've found them to be tough and rubbery. However, these were juicy and tender, and had quite a lot of flavor. In addition, the fried batter was thick and crispy. On a few occasions when I took a bite, the chicken pulled away from the rest of the tender, leaving a large portion of fried batter waiting for my next bite. These are easily the best chicken tenders that I've had, and it could be the best fried chicken that I've had.
The fries are cut and fried on the premises, as the bags of potatoes will attest. In addition, the skins are left on the fries, which only makes me like this place more. I found the fries to be crunchy and tender -- much like the chicken I was enjoying.
This was a really great meal, at a VERY reasonable price ($6 and change). It's locally owned and all of their ingredients are fresh. I can't recommend this place enough.

Kid Friendly: Yes. They offer a kids meal, and I don't think your children could hurt the cement floors. Also, what kid doesn't love chicken tenders?

Recipe Friday: Asian Style Chicken
This was the first recipe I actually used on a whole chicken. My wife showed me how do do it
Once cooked, the skin should be nice and crispy, and the meat tender and juicy. In addition, the spices and the orange make this a fragrant and delicious way to serve the chicken.
Ingredients:
1 Whole Chicken
2-3 tablespoons Chinese 5 Spice powder (found in the spice rack at your local store)
3 garlic cloves
2 oranges
Directions:
1) Preheat oven to 375
2) Wash the chicken and remove the junk (neck, heart, liver, etc.)
3) Drizzle juice from one orange over entire chicken
4) Rub powder over entire skin of chicken
5) Stuff Chicken with garlic and quartered orange
6) Cook at 375 for approx 1 hour and 30 minutes
7) Enjoy!

Sunset Terrace at Grove Park Inn (Asheville, NC)
For the first time since 2006, my parents left the confines of the west coast and have ventured out to visit me and my wife. So, to make the most of their visit, and to keep my mother occupied, I took them over to Asheville to see the Biltmore Estates.
After a morning of oggling the largest house in America, and wondering how I'd redecorate it -- I'm thinking that I'd put a seven-story waterslide into the main dining room -- we decided to head over to the Grove Park Inn for lunch, and to meet up with my wife who was travelling though the area on her way back from a work trip.
It was a gorgeous day outside, so we opted for the casual outdoor seating at the Sunset Terrace. Since it was lunch time there was no sunset, but the views of the Blue Ridge Mountains were nonetheless breathtaking.
The first time we saw our waitress was 10 minutes after we sat down. She ran though the specials, and then took our drink orders. About 5 minutes later, our drinks came, and she took our food orders. I got the Bruschetta Chicken Sandwich. Which was described as a "Springer Mountain Farms chicken breast, havarti, goat cheese basil spread, prosciutto ..." For my side, I chose onion rings -- I was in the mood to get a little grease with my lunch.
After a 30 minute wait (What the #$%&$!???) our food arrived. My sandwich was a little different that I was expecting. It was large, and didn't resemble the smaller bruschetta that I'm used to. Instead, it was simply an open-faced sandwich. The ingredients were good, and I had very few complaints about it. The chicken was char-grilled and flavorful, with a hint of sweetness from a marinade. In addition, it was still moist, and not over-cooked. The onion rings were good, and just what I was looking for.
Some of the other meals at the table left a bit to be desired.
My wife's steak sandwich was VERY fatty. The only piece I tried was so fatty that I had to spit it out -- it simply was't chewable. And they forgot to put salad dressing on my Mom's lobster salad (lobster over greens). To top it all off, I had to flag down our waitress twice: Once to get a coffee refill for my Dad, and next to get salad dressing for my Mom. The thing is, our waitress was just a few feet away from us, but too busy talking with other wait staff to notice that we needed attention.
All in all, this was a disappointing experience. For the price, I had expected better service and food. Then to top it all off -- they added a service charge for only four people!! Sadly we left our waitress a small tip, because we were tired of waiting for the change. If it weren't for the view and the weather, this lunch would have been a waste.

Atmosphere: 5/5
Food: 3/5 (my sandwich = 4/5, my wife's = 2/5 so I gave the average.)
Service: 1/5
Total: 9/5
Price: $$ (My sandwich, drink and service charge came to about $20)
Conclusion: Great view, ok food, and negligent service. We would've been better served at McDonalds.

Recipe Friday: Lemon Chicken
When I first started cooking, I was terrified of actually cooking a whole chicken. Let's face it, its not the prettiest site. A plucked and headless carcass, is not the greatest thing to deal with. Who would've guessed it's sooo darn tasty???
So, after I got over the "YUK" factor, this has become one of my good 'ol standbys. Serve this with some Mac and Cheese, and you've got one of my wife's favorite dishes!
Ingredients:
1 Whole Chicken
12-18 Sage Leaves
3-4 garlic cloves
2 large lemons (3 small)
Salt and Pepper
Directions:
1)Wash the chicken, and remove the neck, heart, liver, etc.
2)Place chicken in foil-lined pan.
3)Rub all of the chicken with lemon juice from one lemon, and then rub a generous amount of salt and pepper onto chicken too.
4) Stuff chicken alternately with sage leaves, garlic, and lemon (sliced into quarters or sixths), repeat until chicken is full.
5) Place one lemon piece and sage leaf underneath each wing.
6) Cook in oven at 375, for approx 1.5 hours.
7) Eat with a bottle of chardonnay, and enjoy!
